Harvest is over and wine is aging in barrel. The caves are filled with the aroma of the 2011 vintage.
The vines have gone dormant and pruning begins.

After harvest is over and fermentation has completed, wines go into their respective aging vessels. Kenzo Estate uses one hundred percent French Oak for our red wines. Asatsuyu, our Sauvignon Blanc, will rest in a percentage of French Oak and the remainder in stainless steel barrels. As the wines age, we will check them periodically, adding nutrients, topping off, racking, and insuring that malo-lactic fermentation is completed for our reds.
As the month’s pass, we will begin the blending process and slowly shape the wines until they are ready for bottling.
